If you don’t know much about freeze-dried candy, the process transforms candy you already love into a new and unique crunchy texture.
It has its roots with NASA, and by the 80s, novelty items like “astronaut ice cream” became popular in museum gift shops. With that said, the recent popularity exploded around 2020 with viral social videos showing how freeze-drying transformed traditional candies and gummy worms into larger, crunchy, and intensely flavorful treats.
The process can be summarized in 3 steps:
Freezing: The candy is first frozen at extremely low temperatures.
Sublimation: It’s then placed in a vacuum chamber where low pressure causes the ice to turn directly into gas, bypassing the liquid phase, a process called sublimation.
Result: This removes water, leaving the candy light, crunchy, and with an intensified flavor and a longer shelf life.
Detailed Results
Texture: Transforms from chewy or gummy to light, airy, and crispy.
Flavor: Flavors become more concentrated and intense due to the removal of water.
Lightweight: The process makes the candy significantly lighter.
